Raw Zucchini-Corn Salad with Hummus Dressing
Are you trying to get more raw vegetables into your diet? Then you need to try this salad. It is so easy and on the table in under 10 minutes. Made of crunchy zucchini, sweet corn, and arugula on a bed of avocado with a rich and creamy hummus dressing. It is luscious and very filling!
Ingredients
- 1 small zucchini, julienned
- 1 small ear of corn, kernels removed
- 1/8 of a red onion, shaved
- 2 handfuls of arugula, chopped
- 1 avocado, halved and sliced
Dressing
- 2 heaping tbs plain hummus
- 1/4 cup seasoned rice vinegar, I used Nakano
- 1 small clove of garlic, crushed
Method
- Julienne the zucchini, remove the corn kernels, shave the red onion, and chop the arugula. Place in a large bowl for tossing.
- Add the crushed clove of garlic, the hummus and vinegar and toss thoroughly. Be sure the hummus is evenly dispersed and not clumped.
- Slice each half of the avocado and spread on two plates. Top with the salad. Serves 2. Enjoy!
