Simple Napa Cabbage Slaw
Simple, delicious and nutritious is always a winning combination. This was an unplanned slaw I pulled together with what I had and you can, too. Any combination of salad ingredients could be used here and the Asian inspired dressing is fresh and clean. Pare it with a another vegetable heavy stir-fry and you’ll probably hit all your veg requirements for the day!
Ingredients
- 4 leaves of Napa Cabagge, chopped
- 1 cup red cabbage, chopped
- a few slices of red onion, chopped
- a few snips of microgreens or herbs
- 1 small clove of garlic, crushed and minced
- 1 small slice of ginger, crushed and minced
- 1/2 tsp toasted sesame oil
- splash of seasoned rice vinegar, my favorite is Nakano
Method
Simply chop the ingredients and add the ginger, garlic, sesame oil and a good splash of the seasoned vinegar. I chose to leave the cabbages in larger pieces so the colors are bright, but it could be finely chopped like a traditional slaw as well. Serves 2.
